The Commission has granted Protected Geographical Indication (PGI) status to the Spanish meat product “Chistorra de Navarra, Txistorra de Navarra, Nafarroako Txistorra”.
Chistorra de Navarra/Txistorra de Navarra/Nafarroako Txistorra’ is a meat product made from pork and pork fat, minced and seasoned with salt, paprika and garlic, kneaded, stuffed into casings and subjected to a short maturation-drying process. The finished product is between 17 and 25 millimetres in size.
Chistorra’ is a product which was originally produced in Navarre and, owing to its reputation and widespread use, spread throughout Spain and was also produced in other territories, with the term ‘chistorra’ being used (alone) to refer generically to this type of sausage; However, the term ‘Chistorra de Navarra / Txistorra de Navarra / Nafarroako Txistorra’ is still used to refer to the original sausage produced in Navarre, which retains all its reputation and is characterised by the fact that it is traditionally made using only pork meat and fat. This product has been present in the region’s gastronomy at least since the beginning of the 19th century.
