It is white or slightly yellowish in colour and soft in texture. The cheese has a mild, milky taste, and the persistence of the sheep&#8217;s milk flavour, which ranges from mild to noticeable, depends on the variety. The product is produced exclusively in the province of Burgos in the Autonomous Community of Castile-Leon.
